KALYANA VATHKULAMBU
Kalyana vathkulambun is a one of the traditional dish in southindian marriage function,, its also called a name of pulikulambu,aiyangar pulikulambu.
aiyangar vathakulambu, we are cook this recipe home weekly once,i got this recipe from my grandma,grandma is store this gravy morethan one week and have it for a few days and the colour of the gravy is look like a more spiccy and gravy spicy is low and colour os high , generally manathakali vathal or sundaikaai vathal are used, i m used suundaikaai vathal got a in market that time i make this kind of recipe.
Ingredients:
- small onion-10 numbers
- tomato-3
- garlic -10 to 12
- coriander seeds- one full hand
- full pepper-10
- tamarind-lemon size
- salt to taste
- turmeric powder-1/4tspn
- asafodita-1/4tspn
- gram dhall-3tspn
- curry leaves
- cumin seed-1/4tspn
- giggly oil-2tspn
- sambar masala-3tspn
- bitter berry/sundaikai-10-15
- coconut-1/shell
- red chilly-3 numbers
procedure:
take a fring pan put on a oil and roast a coriander seeds they roast it add a gram dhall for roasted add also coconut for roast few sec all3 roasted ingredients are add to blender to smooth paste take a frying pan pour a oil,then add a mustard seed broken a mustard seed add a cumin and garlic,green chilly and small onion fried till golden brown in color add a tomato to cook for it gravy consistency take a tamarind and add a masalas mix well add a blundered paste add mixed masalas are pour into a cravy add a salt to taste add a asafodita wait for a 10 mins boiling consistence take a another pan add a bitter berryseed/sundaikaai fry it crunch pour a crunchy bitter berry yummy and taste kalyana vathkulambu is ready to serve.

Fry coriander and gramdhall with turn it color in brown to fry it low flame
take1/2 shell of coconut grated it and put put grated coconut and fry it for golden brown or dark brown in color
Take 1/4 kg of small onion, 1 tomato sliced , 4 to 5 red chilly,curry leaves, 1 to 12 garlic pieces.
Take a lemon size of tamarind and dissolved 2 cup of water and also add turmeric powder and home made kulambu masala mix and take a side
Take a another frying pan put nalennai oil then put onion red chili curryleaves garlic add saute well
Blend coriander seeds and grated coconut powder and put it add that onion and tomato mixture, and mix it then add tamarind and masala add water
Take pan and put dry bitter berry/ sundaikai brown in color
Pour a fried bitter berry /sundaikai into a gravy and mix cooked for 5 mints kalyana veetu vathakulambu ready to serve.
